My Aunt Wendy was one of the greatest cooks I ever knew. Every time we went to her house, even for a short visit, it was something big , eat in the kitchen. She made chicken and dumplings with dumplings that were like little clouds, never sticky or floury like so many are. She made cakes, tarts and cookies were the winners of the blue ribbons at every contest in town. And her holiday dinners were the most sought-after invite the whole family.
However, Aunt Wendy until the day she died could not make a cheesecake that did not come out of the oven with a top that did not look like a topographical map of California. Cracks, large and small, narrow and wide, shallow and deep all would crawl across the top of the cheesecake, often endanger the structural integrity of the whole.
Cracks in the top of the cheesecake is one of the two major problems at home cooks encounter, and they can make your beautiful work of love in the ugly duckling of the Dessert tray.
However, there are two simple steps you can take to avoid cracking. First, a water pan in the oven with the cheesecake is as it bakes. The additional moisture in the air will keep the surface moist and keep it from cracking, to help in the same way, moisture cream your hands. They can also mix one teaspoon of cornstarch into the batter before putting it into the pan. This is a natural thickener will guard against separation, which leads to cracks.
The other big hurdle most cooks encounter from time to time is the lumpy cheesecake. In contrast to cracks not affecting the overall flavor give poor or incomplete mixing of lumps, will affect the taste. To protect yourself, you bring the cheese and eggs to room temperature, the fats in the Mix both make it easy and complete.
